Recipe Tips:

FAQs

What food coloring is best for red velvet cookies? ›

(I like Americolor Red Red or Super Red.) Liquid coloring is fine in a pinch, but you need more of it for the color to actually show up. If you're looking for a natural alternative, use 2 teaspoons of beet powder. The color stands out a lot more in cookie dough than in cake batter, and you won't taste it.

What is the trick to making soft and chewy cookies? ›

It's not the egg, all-purpose flour, or even the vanilla extract. The simple, yet oh-so-necessary component is cornstarch. That's right, the flavorless thickening agent used for soups, stews, and curries is also the secret weapon for baked goods that boast a silky-smooth mouthfeel.

How do you make cookies soft and chewy vs hard and crisp? ›

Different types of sugars affect the texture because they absorb different amounts of water. Remember moisture is the key! White sugar creates crispier cookies and brown sugar creates chewier cookies.

What is the best topping for red velvet cookies? ›

Red Velvet flavor is like a muted chocolate flavor, with a hint of tangy flavor. In these cookies, the hint of tangy flavor comes from a little bit of white vinegar. Red velvet is typically paired with a cream cheese frosting, which is how I frosted these!

What is red velvet cookie dough made of? ›

Add in your egg, vanilla and red food colouring and beat again. Add in the plain flour, cocoa powder, baking powder, bicarbonate of soda, and salt and beat until a cookie dough is formed! Add in your white chocolate chips and beat until they're distributed well!

How to make boxed red velvet cake better? ›

To enhance a store-bought red velvet cake mix, replace the oil with melted butter, add an additional egg, and substitute milk for water. Introduce a box of chocolate instant pudding mix for increased moisture and flavor, and don't forget to add a splash of red food coloring for that classic red velvet look.

What food coloring is best for red velvet? ›

We recommend gel food colouring, such as Sugarflair and Wilton, having tested both of these brands out in our kitchens with great results.

Is red velvet just chocolate with food colouring? ›

While Chocolate Cake is made primarily with cocoa powder and sometimes melted chocolate, Red Velvet Cake is made with a small amount of cocoa powder, but is also known for its signature bright red color, which is usually achieved by adding red food coloring to the batter.

What is the secret ingredient to keep cookies soft? ›

For soft cookies, use: Brown sugar, as it has a high moisture content and retains moisture better than white sugar. Also, when combined with eggs, brown sugar can prevent spreading (taller cookies tend to be softer and fluffier). Shortening instead of butter or in addition to butter.

How do I make my cookies chewy instead of crunchy? ›

The higher the protein content of a flour, the more gluten can be developed when hydrated. Plus, a higher protein content means more moisture can be absorbed. Together, a higher protein flour retains more moisture and creates more gluten—aka it's more elastic and chewy.

Does baking soda make cookies softer or harder? ›

Baking soda is generally about three times stronger than baking powder, so adjust your recipe accordingly. Baking soda and baking powder can produce cookies with different textures. Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies.

What does more egg do to cookies? ›

Yolks also act as an emulsifier, making a creamy dough even before it's baked. Egg whites, on the other hand, can have a drying effect. A cookie made with extra egg yolk (or, in this case, only egg yolk), will be lighter and chewier than a cookie made with whole eggs.

What are some common mistakes people make when baking cookies and how can they be avoided? ›

The 10 Most Common Cookie-Baking Mistakes—and How to Avoid Them
