It has been a long time; I'm waiting to post this recipe. Whenever I get into the pasta isle in the grocery stores, lasagna sheets always impress me; I grab them as soon I see them.
Ground meat stuffing makes a wholesome dinner, but I wanted to make something light today. This meatless lasagna roll-up recipe is excellent whenever you feel like going with a light dinner.
If you wish to cut down calories from this dish, reduce the cheese quantity(Do you know I'm stressing the word 'reduce' here? You cannot cut it down completely :). Also, opt in for wheat or multi-grain pasta sheets.

How to make meatless lasagna roll-ups
Add Cottage cheese, Parmesan cheese, egg, and dried thyme in a small mixing bowl.
Combine them well, so that the egg blends well with the cheese and no lumps are seen.
Cook Lasagna sheets as per the package instructions. Drain and spread in a tray.
Spread the egg mixture evenly over the lasagna sheets. Hint: If you wish, spread marinara sauce to the egg mixture layer.
Start rolling each sheet. The rolls are neither too tight nor too loose. It has to be firm, and that's the thumb rule.
Repeat the process for the remaining sheets as well. And keep them ready for the following process.
In a baking tray, spread marinara sauce for about a quarter-inch thickness. And place rolled lasagna sheets above it.
Arrange rolled sheets as per the capacity of the baking tray.
Pour the remaining marinara sauce over the rolled sheets.
Cover it with aluminum foil and bake it for 350°F for about 30 minutes, in the preheated oven.
Remove it from the oven, and sprinkle Mozzarella cheese and Parmesan cheese over the lasagna rolls. Bake it uncovered for another 5 minutes or until the cheese melts down.
Increase the cheese quantity as much as you like. And there is no restriction on the level of cheese here :).
Serve immediately, with your favorite toppings like chopped basil leaves, Goat cheese, Parmesan cheese, etc.
